Breakfast Sandwich

I worked at a place called The Sandwich Factory back in the day.  Not my favorite job I might add because the customers kinda sucked. 

At any rate, we made a breakfast sandwich that consisted of a scrambled egg microwaved in a bowl or cup for a minute.  I thought it was kind of a slick trick but it also kinda grossed me out and I'm not sure why.  I worked there for almost a year and I never tasted one.

Flash forward 25 years, wait, what? 

25 years!  I'm not that old!!

Anyhoo....flash forward some years and thanks to their father, my children have decided that Bruegger's breakfast sandwiches are the thing to eat after church.  Did I mention that they are $5 each and Max can eat two?  Did I mention it's bacon, cheese and a microwaved egg on a bagel!!  Ok, I can't prove the microwaved egg but it sure looks pretty similar to the eggs from back in the day.  So, I decided to give it a whirl at home where it would cost $5 to make 6 of them and the result..the kids loved them!

Here's what you'll need

1 Bagel ~ fresh, refrigerator or toasted, your choice
2 slices of bacon ~ this can be made ahead of time and kept in fridge for easy assembly.
1 slice American Cheese ~ you can get fancy but my kids like good old cheese slices for this
1 Egg
Cooking Spray

Spray small microwavable bowl with cooking spray.  The one I used is about the size of my palm.  Crack egg, sprinkle with salt and pepper, whisk and throw in the microwave for 1 minute (you might have to adjust cooking time for your microwave) 

I toasted the bagel because they weren't fresh.  Sprayed a little spray butter on it.  Put bacon, cheese and topped with egg.  Cut, serve and put your money back in your pocket:)

You can use any kind of meat or cheese and if you really want to get crazy you could use an English muffin!

Personally, I'd throw some spinach on here too but this is "my" kid friendly today.

Chicken Sandwich

Claire wanted to stop at Wendy's and get a chicken sandwich and I said that I would make it at home. I got the egg face. For those of you unfamiliar with the "egg face", it is a scrunched up, I think I'm going to be sick face that "I" make when I am served eggs that aren't completely cooked. Claire has perfected the egg face when I say something she doesn't want to hear.

However, I am not swayed by the "egg" face so I went home and made these.

What you'll need:

2 Chicken Breasts boneless/skinless
1/2 C Flour
Salt, Pepper, Garlic Powder
Crisco for frying
Shredded Lettuce
Buns

Cut your chicken breast in half and put on Saran wrap.
Cover with Seran wrap and pound with the soft side of your meat hammer, it probably has a different name, that name escapes me at the moment. You want to make your first hit in the center. Don't hit too hard or you'll break straight through. Pound softly in the center until you flatten out your chicken.
I season the flour with probably a teaspoon of each seasoning but I also sprinkle the actual chicken with them as well.
Flip and cover each side with flour. Shake off excess.
Put it hot grease. Cook for a couple of minutes on each side.
If you want to know if your grease is hot enough, put the handle of a wooden spoon in and if the oil bubbles up around the handle, you're ready to go. Typically takes about a minute after the Crisco turns to liquid with your heat on an 8.
Put on your bun with lettuce. You can make some french fries from scratch too if you're feeling sassy. Just peel, cut evenly and fry until golden. Both kids said it was better than Wendy's...shocker;)
AND, if you're Claire..you will pour ketchup on top of both and consume. Sorry, no photo of MY egg face when she does that.

Gyro Kjome Style

I remember my kids taking a bite of my Gyro at the fair and after they said, "what kind of meat is that"? I said, "Lamb".

"ewwwww, why didn't you tell us. I think I might be sick".

"You mean like Mary had a Little Lamb..LAMB".

The horror of it all. It's what I like to call a therapy moment for my children. You know, when they are older and are sitting in their therapist's office..."and then my Mom fed me.......LAMB".

To this day I don't think Max will try anything I have unless he first asks, "what's in it"? Live and learn I guess.

So, when I put these on the table I got an eyebrow raise. "Just eat it", I said.

"But what kind of meat is this"?

"It's like steak".

"What kind of steak"?

"$15 per pound beef tenderloin now EAT it". Another therapy moment perhaps?

At any rate, it was a hit. Dinner was on the table in less than 20 minutes. And, Max even said that he'd like to try it with cheese next time. It's all about baby steps:)

What you'll need:

3/4 lb Beef Tenderloin ~ you could use a strip streak or even sandwich steak
your favorite seasoning~I simply used salt, pepper and garlic powder
Package of Flat Bread
Lettuce

Tenderloin

Sliced nice and thin. Let's hope my Father in Law doesn't see this because this is a crime in his opinion to do this to a piece of prime beef

Flat bread that I heated up in the oven for a couple of minutes. You could skip that step but I think it makes it just a bit tastier. And, if you wanted to melt cheese on the bread, now is your chance.

I cooked the meat to medium because that's about as funky as it gets with meat around here.

Serve with some fries and you've got dinner

I would throw a little sour cream mixed with salsa on mine but I'm crazy like that:)

Grilled Turkey Sandwich

I was in the mood for a grown up sandwich and this absolutely hit the spot.

What you'll need:

Good bread, sandwich sliced..I used Vienna
Havarti cheese slice thin
Spinach leaves
Turkey breast
Avocado sliced thin
Butter

Butter your bread. Yes, you heard me, butter your bread. I typically use Spray Butter for grilled cheese but this sandwich is a grown up, yummy sandwich and in my opinion requires butter to soak into the bread as it cooks.

On the non buttered side, put some thinly sliced Havarti. I actually used Garlic Havarti...YUM!?!

Next comes Turkey,
Thinly sliced Avocado,
Spinach leaves,
another layer of Havarti

Now grill this like you would a grilled cheese over medium heat. It melts and all the flavors blend together. I would have added some grilled onions but I was too hungry to mess around. I wanted to get this party started and it was EXACTLY what I was looking for.

Slice your avocado in half and thinly slice within the skin. This avocado is perfectly ripe, if yours in not, you might have to work a bit and peel it first

See the butter...Butter your bread

Layer of Havarti and turkey next

Avocado next, you don't want this on top of the bread or it could get squishy

Spinach and another layer of cheese and grill on a medium heat pan
