Breakfast Casserole

I found this recipe here and changed it a bit based on comments. I was really skeptical that eggs could cook for 10-12 hours in a crock pot and I was correct, the recipe was done in 5 or at least that's when I checked it. I think 4 hours would have actually worked even better.

It was very tasty and I'd make it again. I would put it all together, put it in the fridge and have the first person up turn it on. You can also use whatever cheese you like or vegi's~we thought mushrooms would have been a good addition.

32 oz bag of frozen Hashbrowns~I forgot these at home so I used a bag of refrigerator ones and they worked fine
Green Pepper chopped
12 Eggs
1 C Milk ~ I used skim
3/4 brick of Pepper Jack ~ shredded or sliced thin
1/2 brick of Cheddar ~ Shredded or sliced thin
1 package Turkey sausage chopped and cooked ~ or 1 lb breakfast meat, cooked and chopped
2 t Thyme
1 t Salt
1 t Pepper
1 t Greek Seasoning

Spray crockpot with cooking spray. We're going 3 layers here:

Layer one..1/3 hashbrowns, 1/3 meat, 1/3 green peppers, 1/2 of the Pepper Jack, 1/2 t Salt, 1/2 t pepper and 1 t Thyme.

1/3 hashbrowns, 1/3 meat, 1/3 green peppers, Cheddar cheese, 1t Greek Seasoning

1/3 hashbrowns, 1/3 meat, 1/3 green peppers, 1/2 of the Pepper Jack, 1/2 t Salt, pepper and 1 t Thyme.

Pat down. Whisk eggs and milk until combined and pour over top. Crock on low for 4-5 hours.

Sorry, I don't have a photo. I made it up at a cabin and forgot my camera but I promise it looks like any egg bake you've ever eaten.

Scavenger Hunt

One year for Valentine's Day I did a Scavenger Hunt for my now ex husband. He had to search all over and at the end of the hunt, he had found flowers, our dinner, dessert, wine and a small gift for him. He loved it.

When my kids were big enough, I started doing it for them. Every year on Valentine's Day I hide clues and small presents. I knew they liked it but I didn't realize how much until they had friends sleeping over a couple of years ago the night before Valentine's day and before they went to bed they said, "we're still having our scavenger hunt right"?

I will admit that some years I am more prepared and the clues rhyme well. Some years I have them on pretty paper, neatly printed on the computer. Some years they have to figure out the clues together. It doesn't matter "how" I do it, just that I do.

Typically they'll have 4 to 5 clues/stops. The first clue can be attached to a heart shaped balloon or just on their door. It might say something like, "Look for some clothing that's blue...there you will find your very first clue".

In the pocket of their BLUE robe or hoodie, they'll find a heart shaped sucker and the next clue.

This continues 4 more times and takes them all over the house. I typically give a small heart filled with chocolate (Walmart $1), heart printed socks or underwear, their favorite beverage or snack or Pez and then a little gift for the final.

It's not about the gifts, it's about the fun, so have some!!

Rolo Cookies

Yep, you read right, Rolo cookies. Chocolate and caramel, two of my favorite things in a cookie~YUMMY!

I only make these a couple of times a year because I will eat more than I should. But Valentine's Day, now that is a time of the year that you can and should eat ALL things chocolate and caramel. I meant to buy red colored candy melts for the drizzle to make these more Valentine festive but spaced.

You also don't need to put any drizzle but I think it makes the cookie so much prettier.

2 Eggs
1 C Butter softened
2 t Vanilla
2 1/2 C Flour
1 C Brown Sugar
3/4 C Cocoa
1 C Sugar
1 t Baking Soda
1 bag of Rolos unwrapped

Mix your wet ingredients, add the dry and mix. Take a heaping tablespoon of dough and wrap around the Rolo making a ball. Make sure that the Rolo is completely wrapped, you don't want the caramel to seep out while baking.

Bake at 350 for about 8 minutes. Take out of the oven and whack on the counter to flatten a bit (you don't have to do that but I like a more uniform looking cookie, plus I like the element of surprise when someone bites into the cookie). Put on waxed paper to cool. Drizzle with white chocolate.

Put your Rolo in the middle of some dough and roll into balls
This is about how big they should be, about the size of a large gumball.Give them a whack on the counter before you take them off the pan

Hockey Cake


I have made this cake for my son and two of my nephew's birthdays. It's so simple that I might make it for our end of the season party.

All you need is to make a cake in a 13x9 pan and flip onto a cookie sheet. Buy the hockey guys at your local cake store and you could even use all store bought frosting.

I decided to do something fun on the inside too. I divided the batter into into 3 bowls and added food coloring to two of the bowls.
Pour one color in at a time, adding the new color directly in the middle
Bake as directed and see the FUN inside too
